Ingredients


1. 2 Lemons, zested

2. 1 teaspoon vanilla

3. 1 teaspoon ground cinnamon

4. 30 ounces whole milk Ricotta

5. 2 and 1/4th cups powdered sugar

6. 6 ounces semisweet mini choco chips

Needs for the Cassata Cake


1. 1 and 3/4th cups of all-purpose flour

2. 6 eggs separated

3. 3/4th cup milk

4. ½ teaspoon salt

5. 1 teaspoon vanilla extract

6. 1 teaspoon baking powder

7. 2 teaspoon cornstarch

8. 2 cups of superfine granulated sugar

9. 2 sticks of melted butter

10. 1/2 cup marsala or rum

11. 2 tablespoons water

12. 4 layers of cake in total

For Decorating and Frosting of the Cassata Cake


1. 6 Maraschino Cherries

2. 6 Small Strawberries

3. 1/4th pound semisweet choc shavings

4. 1/3rd cup powdered sugar

5. 1 tablespoon Marsala or Rum

6. 2 cups heavy whipping cream

How to Prepare Cassata Cake


1. Preheat the oven to 165 degrees Celsius. Grease and add parchment paper to a 2 nine-inch cake pan.

2. Now mix all-purpose flour, cornstarch, salt and baking powder together in a bowl.

3. Beat the yolk of the egg until a thick paste is formed, add granulated sugar, cold water and vanilla essence to it and beat it until a thick foam is prepared.

4. Gradually add flour mix (point 2) to the yolk mixture and mix everything to make a smooth batter.

5. Now beat the egg white with butter to a fine paste and, using a flexible spatula, add this foaming paste to the mixture.

6. Now, separate the mixture into 2 nine-inch cake pans and bake them at 165 degree Celsius for about 25 minutes. Once baked, let it cool off for 10 minutes and then invert.

It’s Filling Time


1. Take a large bowl and add ricotta milk, vanilla extract, powdered sugar, and cinnamon powder to it. Whisk them either with a hand or electric mixture.

2. Ricotta milk has many lumps, so it might take a little time to come out with a smooth consistency.

3. Now the homogenous mixture is well incorporated, add the lemon zest and choco chips to it.

1. Add whipped cream, rum and sugar and beat until formed a firm frosting. If you are not using it at the same time, then refrigerate it till you use it.
