It hardens quickly and creates a glossy, smooth consistency that's perfect for beautifully cut-out decorated sugar cookies. Royal icing can turn regular sugar cookies into little works of art! Sleek and shiny, Royal Icing and Flood Icing are really simple to make and decorate too.
Once you've outlined your cookies with the outline of your royal icing, you'll "flood" your designs with icing. What you need!
• Sugar Cookies
• Royal Icing in Piping and Flooding Consistency
• small round piping tip
• piping bag
• toothpick or cocktail stick
• cookie icing bottle (optional)
• Piping Bag Stand (optional)
Instructions
• Pipe the outline of the cookie. Let it dry for a few minutes before flooding it with runny icing.
• Take a bottle filled with running royal icing. Start piping from the outside and work your way down the middle. Be careful not to overflow the cookie. If any air bubbles appear, use a pin to punch them out.
• Fill the cookie icing bottle with your flooding consistency icing. If you don't have an icing bottle, you can use a piping bag with a slightly larger rounded end.
• Pipe within the outline of your cookie so that it fills roughly
• Use a toothpick, in small circular motions, quickly spread the floating icing over the entire cookie until it meets the piped outline.
• When the cookie is completely filled with the icing, tap it gently on your workspace to lift any air bubbles to the surface. Pop them with your toothpick.
• After icing your cookies, allow cookies to cool down at room temperature for at least 12 hours before you store them.
Tips to remember
• While it's best to use fresh Royal Icing for cookies, you can store egg whites in the refrigerator for up to a week. But it should be covered with a damp towel to avoid drying and hardening. Meringue Powder Royal Icing can last up to a month if kept in the refrigerator.
• If it's not the right consistency for your liking, add a little water, a little bit at a time (you can always add more but you can't take it away). I like to use a small bottle of spice to drip off the water slowly. You can also use a spray bottle to make sure you don't add too much water too quickly.
