Hummingbird Cake
1 box yellow cake mix
1/2 cup flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 teaspoon vanilla extract
3/4 cup oil
3 eggs
3 mashed bananas
8 oz canned crushed pineapple
3/4 cup chopped pecans
Cream Cheese Frosting
1 cup unsalted butter
2 packages cream cheese
1/2 teaspoon salt
2 teaspoons
6 to 6 1/2 cups powdered sugar
Instructions For: Hummingbird Cake
• Begin with preheating the oven to 350 degrees
• Combine all ingredients except the chopped pecans in the bowl of your stand mixer and mix on low speed to moisten the ingredients for about 30 seconds and then increase it to medium speed and mix for two more minutes.
• Now fold in the chopped pecans and divide the batter between three prepared 8 inch cake pans
• Bake the batter at 350 degree F for about 25-30 minutes or until a toothpick comes out clean.
• Let the cake cool in the pan and once cool enough, place them in a wired pan for further cooling
Cream Cheese Frosting
• Add butter cut into slices and to the bowl of your mixer and beat it on low to medium speed until the butter is softened and smooth.
• Now, cut the cold cream cheese into pieces and add to the butter, beating at low to medium speed until incorporated.
• Add in the vanilla and gradually add the powdered sugar beating on low speed until blended.
• Now, cover the bowl with a towel to keep down the cloud of powdered sugar and increase the mixing speed and beat until fluffy.
• Avid over beating or the frosting will become too soft and if that happens, just refrigerate it for a short while to firm it up a bit.
• Keep this in the refrigerator, for it will pipe best when cold.
Assembling
• Place the first cooled cake layer on a cake plate and spread cream cheese frosting all over.
• Repeat the process for the next layer, and then top it with the third cake layer.
• Frost the cake with cream cheese frosting however you like and decorate it as per your liking.
